    Observation:Spray cleaner in excess of 200 ppm chlorine, diluted now to 100 ppm, test frequently to ensure is not in excess of concentration of 50-100 ppm.

    Observation:Does not have most recent inspection posted within public view, will post this inspection.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation:Need test strips to check concentration of sanitizer, using bleach currently.
  • Sponges not used on clean or in use food contact surfaces
    Observation:Using sponge for washing of dishes, must not use on food contact surfaces, suggest cloth, may use green scrubber pads without the sponge.

    No signs in RR directing staff to wash hands before returning to work, must post in RR used by employees. Given copies today.

    Does not have the test strips for food service, 50-100 ppm for current sanitizer.

    1) Has water damaged shelving lower cabinet under juice machine, repair to make smooth, cleanable surface. 2) Seal the cut edge of the countertop shortened when installed three compartment sink, suggest two coats of light colored paint or varnish. 3) Caulk the drying cabinet area back edge to wall to aid cleaning. 4) Remove the shipping paper from the side walls of the ice machines on Floor 2 and 3. 5) Repair hole in countertop in public RR's to prevent water damage to area, former soap dispensor?

    Must post most recent inspection along with licenses now behind the door, in area visible by public. Will relocate them.
  • Cleanability of floors, walls, and ceilings
    Provide floor wall coving along wall behind three compartment sink to aid cleaning.

    Out of paper towels at handsink in kitchen area, restocked now.
  • Separation from food, equipment, utensils, linens, and single service
    Has first aid chemicals stored over clean dishes at three compartment sink area, will move now to nonfood items storage area. Corrected on site.
  • Sanitization of food contact surfaces - before use and after cleaning
    Is not sanitizing the food service items at breakfast bar areas, can use same chemical as in three compartment sink for the front counter area.
