    Observation: Ice scoop was laying on ice in ice bin at beverage station. Removed. Corrected.

    Observation: 1) Hot water handle on food prep skin leaks. Fixed. Corrected 2) Missing one cold water handle on food prep sink.
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: Prime ribs were hot held at 120*F. Reheated. Corrected.
  • Sanitization methods - hot water, chemical
    Observation: Dish machine in kitchen was temped at 140*F. Called for service. Corrected.
  • Cutting surfaces maintained
    Observation: Several cutting boards are no longer cleanable. Ordered.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Food items were out of temperature in burger prep chest cooler. Owner decided to use time to control food safety. Food will be used or discarded within 4 hours.

  • Hand drying provided
    Observation: The following paper towel dispensers were empty: 1)Dispenser near by office, 2)dispenser in bar. Must provide paper towel near by hand sink at all the time. Corrected at time of inspection.
  • Plumbing system maintained in good repair
    Observation: Missing hot water handle on hand sink in broil room. Must repair or replace to maintain in good condition.
  • Cleaning frequency of food contact surfaces (PHF/TCS)
    Observation: Food debris buildup in Randell refrigerator in kitchen. Clean as needed.
  • Food storage - preventing contamination from the premises
    Observation: Observed food stored on the floor in kitchen. Store has received a truck before inspection. Must store all food at least 6" off the floor to prevent contamination. REPEAT VIOLATION.
  • Multiuse food contact surfaces are cleanable
    Observation: Observed many plastic containers are cracked. Must replace all damaged containers to in good condition to prevent contamination.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: Overall good date marking. Observed following items were not date marked: 1) Opened hot dogs in walk-in cooler, 2)Opened milk jug in bar. REPEAT VIOLATION. Must date mark all ready to eat food if not used within 24hrs after opened or preparation. Have 7 days from date marked to use or discard. Corrected at time of inspection.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: Didn't have chlorine test strips for bar area dish machine. REPEAT VIOLATION. Must have chlorine test strips to check the concentration of sanitizer can be maintained between 50-100 ppm.

    Observation: Back door has light showing around outer edges. Must seal outer edges and replace weather striping to prevent entry pest.

    Observation: Observed a lot of powder bags were not labeled on the shelving in kitchen. Containers holding food which could be mistaken for other food must be identified with the common name of the food.

Last 2 times we have eaten at this Texas Roadhouse we had to get the manager. The silverware has been filthy, iced tea glass was also filthy, dead fly on the table and a cracked dish that couldn't possibly be cleaned well. The country music was unbelievably loud!! No way we could talk just across the table. Probably won't eat again at this Texas Roadhouse!
