Failure to maintain equipment so as to facilitate cleaning of the equipment. Specifically, I observed metal shield on conveyor line in sanding room 6 was repaired with clear tape that is not an easily cleanable surface
- Cleaning and sanitizing operations
Failure to conduct cleaning and sanitizing operations for utensils and equipment in a manner that protects against contamination of food. Specifically, I observed food worker cleaning floor with spray hose and over spray from water landing on open container of food ingredient-mgr spoke to worker about cleaning and sanitizing bucket before using again / also observed employee picking up spray hose from floor, where spray nozzle head was sitting in water and then using this hose for cleaning food equipment-mgr told worker to clean and sanitize hose before continuing use
- Non-food-contact surfaces (S)
Failure to clean non-food-contact surfaces of equipment as frequently as necessary to protect against contamination. Specifically,I observed floor fans used in sanding room 6 need cleaned
- Signs
Lack of posted, readily understandable signs directing employees to wash and sanitize hands as appropriate. Specifically, I observed hand sinks by front line and in mens room did not have hand wash reminder signs
- Buildings/good repair
Failure to maintain buildings in repair sufficient to prevent food from becoming adulterated. Specifically, I observed ceiling tile over food products in sanding room 6 has hole in tile, not a cleanable surface
- Hand drying
Lack of a sanitary towel service or suitable hand drying devices. Specifically, I observed hand sink at back deck packaging 5 had no hand towels at handsink
- Buildings/sanitary
Failure to maintain fixtures, or other physical facilities in a sanitary condition. Specifically, I observed Water line in starch batch mezzanine dripping onto floor in Back Kitchen
- Maintenance of equip., utensils, and finished food packaging
Failure to maintain utensils in an acceptable condition through appropriate cleaning and sanitizing. Specifically,I observed hard rubber food paddle in back kitchen was worn and no longer easily cleanable
- Hand cleaning and sanitizing preparations
Lack of effective hand cleaning preparations. Specifically, I observed Back kitchen hand sink hand soap dispenser was empty at time of inspection
