Observation: Cut lettuces (50F & 49F) on the salad bar are not being held at correct cold holding temperatures. Person in charge had just recently placed the lettuce in the salad bar and used double pans to prevent the lettuce from freezing. Lettuce was placed in single pans to control the correct temperature. Ranch dressing in squeeze a bottle (55F) stored in a salad bar container on the salad bar is not able to maintain proper cold holding temperature. Person in charge had recently set out the dressing squeeze bottles and placed them at the salad bar. All bottles were placed into the sandwich prep cooler to maintain proper cold holding during service.

Observation: Containers of sushi items (Crunchy roll crab 50.9F)for retail sale were not received at correct temperature of 41F. PIC placed all containers into a reach in freezer to rapidly bring the temperature down. (A) Except as specified in ¶ (B) of this section, refrigerated, POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) shall be at a temperature of 5oC (41o F) or below when received. Observation: Milk ( 54.1F) in silver container for coffee stored by the fountain pop machine was not held at cold holding temperature of 41 degrees or below. PIC discarded milk.
- Sanitizers
Observation: Quat sanitizer in kitchen spray bottle tested high above 400 ppm. PIC made a new solution at the correct concentration.
