Observation: Lettuce, cheese, tomatoes for lunch service holding at room temperature. Discarded at time of inspection. Only enough product will be brought out that will be served during busy times.
- Foods are cooled using appropriate methods
Observation: Soups cooling in deep plastic containers- moved product into several containers at time of inspection.
- Physical facilities maintained in good repair
Observation: Some walls, ceilings are no longer easily cleanable.
- Beverage tubing, cold plates, and ice unit drain lines
Observation: Cold plate is not separate from drink ice at bar area.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Outside of fryers are heavily soiled.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Some areas of kitchen are not cleaned frequently to prevent buildup - around electrical panels, walls, vents for heat/cooling.
