- Physical facilities maintained in good repair
Observation: In the backroom, the floor and the wall near the floor were in bad repair. The walk-in cooler door and various display cooler doors, the seals were in bad repair. The were loose wall/floor junctures throughout the establishment. There was loose wallpaper near the deli cooler.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: The floor, walls, and ceiling in the walk-in cooler were soiled. Behind and underneath some equipment, the floors were soiled.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: The items on the hot dog warmer were ranging from 129 to 134 degrees
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: The fan guards in the walk-in cooler and ceiling vents at the front of store were dusty. The area surrounding the pop nozzles and ice chutes were soiled.
- Test kit provided and used to measure sanitizing solution concentration
Observation: The establishment did not have test strips for the quaternary sanitizer.
