Observation:4 racks of prepared food items (meat balls, ground beef, and rice) for the employee dining facility was not properly cooled from 135 - 70 degrees in 2 hours and 135 - 41 degrees in 6 hours. All food items identified as improperly cooled were discarded during the inspection. Corrected on site.

Two containers of raw ready to eat shrimp were sitting on a counter top not being actively worked. Internal product temperature was 55 degrees. F. Product was discarded. Exec. Steward discussed proper handling procedures with the employee responsible for the shrimp preparation. Exec. Steward will advise Chef of violation as well. Violation corrected on site.
