Observation: Deli Express cooler sandwiches 47.2 deg today and milk in walkin cooler 49.6 deg today. Both have working thermometers. Perishable product should be pulled until coolers are maintaining 41 deg or less.

Observation: shelves in walkin cooler with bottled water need cleaned, floor in walkin cooler needs cleaned, canned goods on shelves need dusting.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation: taco meat was started at 6am and was only 129deg at 9:30. Turned roaster up to 200deg-corrected. Food should reach 165deg within 2 hours.

Observation: sandwich cooler was out of temp today. Sandwiches 47.4deg using my digital stem thermometer. Food was removed and cooler turned off and called for repair. Corrected
