    Observation: walls and floors especially under shelves in store rooms need cleaning

    Observation: fan blowing on clean dishes area was visibly soiled today

    Observation: lots of unnecessary equipment in storage rooms and outside around the back of establishment.

    Observation: most ovens are in need of cleaning today

    Observation: cardboard in walkin cooler should be replaced with something smooth and easily cleanable such as a tray

    Observation: visible gap at back door and area around air conditioner on north side of building needs repaired

    Observation: no paper towels in ladies restroom today

    Observation: can opener was visibly soiled today. Should be wiped down after each use and ran through dish machine at least daily

    fan in kitchen needs cleaned. Plywood shelf above make table needs replaced. Many items stored outside which are unnecessary to the operation of a restaurant and should be removed to lessen chance of insect and rodent harborage.

    fan in kitchen needs cleaned. Plywood shelf above make table needs replaced. Many items stored outside which are unnecessary to the operation of a restaurant and should be removed to lessen chance of insect and rodent harborage.
  • Roasts held at a temperature of 130°F or above
    make table in kitchen was 44.7deg at time of inspection using my digital stem thermometer. No unit thermometer to compare to. Salad bar needs to have more ice packed around all the containers. Cheese was 48deg and should be maintaining 41deg or less
  • When to wash
    Glove change does not replace hand washing.. Always wash hands before putting gloves on and before each glove change. Have all food handlers read and sign handout.
  • Food temperature measuring devices are provided and readily accessible
