- Drying mops
1) Observed two burnted out light bulbs: a. In hood system, b. continental refrigerator. Replace, 2) Mop was stored in mop container. Must provide a hook for mop or drape over bucket to allow to air dry in between uses.
- Roasts held at a temperature of 130°F or above
1) Food stored in GE refrigerator in serve kitchen was temped at 44*6F. 2) Food stored in continental refrigerator was temped at 43.6*F in main kitchen. Coolers were out of temperature. Discarded all potentially hazardous food. Repair. May not use coolers until approval have been given through health department.
- In-use utensils, between-use storage
Scoop were laying in the sugar container. Handle must stored out side of food and keep inverted to prevent contamination.

Light bulbs were not shielded in dry storage. Light bulbs must be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food.
