Test kit provided and used to measure sanitizing solution concentration Currently, Quaternary Ammonia is used for sanitizing ware at the three compartment sink and no sanitizer test strips could be located for checking proper concentrations.
Compliance with submitted HACCP plans and approved variance procedures A Food Code Variance is said to exist for keeping cheeses at room temperature for up to 12 hours - however, no times were recorded of when product came out of refrigeration and therefore unable to determine the beginning and end of the 12 hour timeframe. It is also said that the icecream machine is on a 14 day cleaning cycle. A copy of the Food Code Variance for the cheese kept at room temperature, in addition to the extended run allowance for cleaning the ice cream machine must be posted or readily available for reference.
