    Observation:Unlabeled chemical spray bottle observed under the sink with beverage straws in the south side wait station.
  • Separation from food, equipment, utensils, linens, and single service
    Observation:Unlabeled chemical spray bottle stored under the sink with beverage straws(south side wait station). Tea packets stored under wall mounted hand sanitizer (north side waitstation).
  • Air drying of equipment and utensils
    Observation:Clean pans stacked on top of each other while wet.
  • Food storage, prohibited areas
    Observation:Packets of coffee grounds stored under handsink plumbing(southside wait station). Coffee containers stored under handsink plumbing(northside wait station).
  • Food employees hair is effectively restrained
    Observation:Food handler's hair net was not covering all portions of their hair on the top of their head.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation:Packets of "Homestead Real Butter" stored on dining room tables at room temperatures without temperature control or written procedures for using time as public health control. Packets of butter disposed of today after 4 hours of not being held at 41 F or below. Letter of Correction must be submitted to this office by May 29, 2014 regarding corrective action taken to prevent this violation from occuring in the future.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation:Oasis 146 Multi Quat Sanitizer solution dispensed from the automatic chemical dispensing device at the 3 compartment sink tests at 500 ppm. During the inspection the Manager contacted the chemical supplier to service the unit. Additional water will be added to the solution and tested with the quat test strips prior to use to ensure concentration is within manufacturer's approved range.

  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Raw animal species not adequately separated during storage-Pan of raw chicken stored above a package of raw pork sausage. Corrected at time of inspection.
  • Food storage - preventing contamination from the premises
    Observed clean cups stored under the handsink in the dishwashing areav where this is risk of splashing water contaminating the cups. Corrected at time of inspection.

  • Preventing contamination from equipment, utensils, and linens
    Observed employee scooping ice into a container repeatedly touch the bottom of the scoop with their bare hand as they poured the ice into the container, contaminating the bottom surface of the ice scoop and the ice the scoop then came in contact with.
  • Cleaning procedure
    Employee did not follow the proper procedure for washing their hands as required by the Food Code. Observed employee working in the dishwashing area wash their hands for about 5 seconds and then turn off the faucet handles with clean hands.
