    Observation:The dishwashing machine rinse water temperature only registers as high as 175 degrees, the temperature-sensitive thermolabel did not turn black.

    Observation:Observed visible food particles on deli slicer blade and guard. Corrected on site.

    Observation: There is no properly stocked handwashing sink with hot and cold running water and drainline at the cheese making and preparation station.

    Observation:Observed deep, tightly-covered plastic container of quinoa cooling in walk-in cooler - employee first cooled the food in shallow metal baking pan at room temperature for 15 minutes then transferred to the plastic container. Quinoa was 77 degrees at the time of the inspection. Employee transferred product to shallow metal pan, corrected on site.

    Observation:Flow pressure gauge on dishwashing machine is still not replaced, not in working condition - repeat violation.

    Observed basmati rice prepared yesterday cooling in tightly covered pan with two other pans stacked above and one below, rice was 46 degrees. Discarded, corrected. Observed deep covered plastic container of pinto beans in walk-in cooler, prepared this morning - beans were 123 degrees after one hour. Removed to shallow metal pan, uncovered in freezer. Corrected.

    Observed mold buildup on white chute in ice machine. Observed wet produce tubs stacked on shelves in produce department.

Discarded, corrected. --Observed rice in rice cooker that was turned off - employee stated that the rice is usually held in the cooker while off for an hour. Observed breakfast sandwiches on buffet steam table at 119 degrees - employee stated that the sandwiches are held below 135 degrees for 4 hours. Neither one of these practices have written time/temperature control procedures that have been approved ahead of time by this Department.
