- Handwashing signage
Observation:Some handwash sinks are missing handwash signs.
- Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
Observation:A tightly sealed plastic container with mashed potatoes is temping at >95F. Per mng. these were put in cooler around 10:30, at time of temp it was 2:50. Exceeded the first step, cooling down to 70 or less within two hours or less. Staff discarded potatoes at time of visit.
- Light bulbs, protective shielding
Observation:many lights in kitchen and over beverage prep/wait station area are not shatterproof or shielded properly.
- Established procedures for responding to vomiting and diarrheal events
Observation:Has kit, but needs to provide procedures for proper clean up for staff.
- In-use utensils, between-use storage
Observation:Meat scoop, soiled w/ food and at room temp. Keep scoop in food, between uses.
- Foods are cooled using appropriate methods
Observation:closed plastic container of mashed potatoes- (cooling violation) procedures for cooling need to be changed and verified that they are working.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation:facility does not have a thin tip thermometer. various products on menu that would require thin thip. Only stem thermometer found was 50-550 and it is out of calibration.
- Cleaning frequency of food contact surfaces (PHF/TCS)
Observation:pop nozzles at both bars have gooey build up. ice machine needs to be cleaned, in walk in fuzzy dust, mold growth etc needs to be cleaned up. hood has visible build up over cooking area, wall area and outside of hood nearest to breading area has build up on it. Handles on prep/make cooling units have build up on them. Slicer has build up on it.
