    Observation:There are no test papers available to monitor sanitizer concentration in three-compartment sink.
  • Common name-working containers
    Observation:Observed numerous unlabeled spray bottles in kitchen - corrected on site.
  • Handwashing signage
    Observation:There is no handwashing sign in men's restroom - sign printed, corrected on site.
  • Unpackaged food protected from contamination during preparation
    Observation:Observed water dripping from ventilation hood directly over the open fryer and fryer baskets - it is raining and the employee stated the roof leaks in that area.
  • Foods are cooled using appropriate methods
    Observation:Observed pulled pork cooling in tightly covered, deep plastic container in walk-in cooler, temperature of pork was 103 degrees. Employee transferred meat to shallow metal pan, uncovered, to continue cooling. Corrected on site.
  • Storage of clean linens, single-service, and single use articles
    Observation:Observed cases of plastic cups and lids on kitchen floor - corrected on site.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation:Observed carton of raw shell eggs stored above ground beef in white kitchen refrigerator - corrected on site.
  • Eating, drinking, or using tobacco
    Observation:Observed kitchen employee chewing gum - gum is considered food, discarded, corrected on site.
  • Cleaning frequency of food contact surfaces (PHF/TCS)
    Observation:Observed dried meat particles on meat slicer, which was used yesterday and not cleaned and sanitized within 4 hours after use. Cleaned and sanitized, corrected on site.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:There is no digital, instant-read food thermometer with thin-diameter probe
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observation:Observed 3 boxes and one container of frozen meats thawing at room temperature in storeroom, transferred to walk-in cooler, corrected on site.
  • Ambient air and water temperature measuring devices are accurate to ±1.5°C or ±3°F and are designed to be easily readable
    Observation:Observed thermometer in kitchen refrigerator registered -30 degrees, but actual air temperature was 39 degrees.
