    Observation: Kitchen tiles are damaged/missing (i.e. front of fryers, near dishwasher)
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: Found buffet items to be below 135F (marinara sauce 102F, pizzas 114F, chicken 106F). Corrected immediately by removing these items from the buffet.
  • Design and construction of equipment including
    hot oil filtering equipment, can openers, non-food contact surfaces, kick plates, ventilation hood systems filters, bearings and gear boxes, and condenser units
  • Cleaning of cooking and baking equipment
    Observation: Interior of microwave has food splatters/debris.
  • equipment food contact surfaces and utensils clean to sight and touch.
    Observation: Accumulation of food debris/residue under white prep board of small cooler unit.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observation: Current facility cleaning schedule is not adequate to maintain cleanliness, specifically observed dust accumulation on kitchen ceiling vents, soiled areas near the mop sink, soiled exterior of equipment such as microwave and prep table handles).
  • Storage of clean equipment and utensils
    Observation: Salad bar containers are being stacked on wire shelving near the dishwasher while still wet.

    Two wet mops were found sitting in empty yellow mop buckets (not being hung up to air dry).
  • Linens- cleaning and storage
    Plastic containers were stacked on wiring shelving in the kitchen while they were still wet.
  • Roasts held at a temperature of 130°F or above
    Observed mashed potatoes being held at 130F in the kitchen warmer
  • Cleanability of floors, walls, and ceilings
    Floor tiles are missing in areas around the fryers
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Observed significant dust build-up on vents in front of the fryer hood, vents near pizza oven and kitchen ceiling vents.
