Observation: Walls behind and under dishmachine are not clean to sight or touch. Walls beside breading station are not clean. Fronts of coolers - doors and kick plates are not clean to sight or touch.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Pizza on buffet and hot hold shelf in kitchen were holding at 120 and 118.

- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: Condensation observed on outside of make tables, beverage tubing in the front of the house, and cooler doors in the kitchen.
- Raw fruits and vegetables washed before cutting, combining with other ingredients, cooked, served, or offered for human consumption in a ready to eat form
Observation:Potato procedures do not include a wash step before cutting
