Observation: Cold hold unit behind grill line with temperatures between 45-51 degrees. Foods at 45 degrees were moved to cooler and any with temperatures above that were disposed of.
- Equipment used for heating, holding, and cooling of food shall be sufficient in number and capacity to provide adequate food temperatures
Observation: Cold hold food stations not properly working. Manager has called repair man to fix units and has also ordered in a new cold hold unit.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation: Broken and non-functioning food thermometer observed.
