Hand sink should be accessible at all times to encourage frequent hand washing. At time of inspection hand sink in Formaggio was blocked with large garbage can.

- No direct connection between sewage system and from culinary equipment
There should be an air break under sinks used to house food or dishes. In Pasta Cucina the drain under the food prep sink where pasta is drained has been converted so it is direct plumbed and should be reversed to the original air break. A work order has been submitted. Corrected.
- When to wash
Employees should always wash hands when reporting to work before starting to work with food or clean dishes. It's a good idea to cover handwashing with all employees to cover that hand sanitizer does not replace hand washing.
