Observation: pizza make line not working- new one ordered. Sandwich make line holding at 50*- service called at time of inspection. Send copy of service ticket once repaired.

Observation:Hot foods placed in makeline in covered plastic containers. Meatballs cooling at room temperature on the counter. Both corrected at time of inspection by placing in walkin cooler.

Observation: Kitchen light bulbs shall be covered.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Cold holding equipment missing thermometers for monitoring temperatures.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation: A thin tip probe thermometer is needed to monitor cooking, cooling, and holding temperatures.

Observation: Kitchen ceiling vents and hood vent filters have heavy dust accumulation and shall be cleaned.

Observation: Outside of buckets by, dough mixer, are soiled and shall be cleaned. Seals of cooler doors are soiled and shall be cleaned.
