    Observation: applicant has six months to complete a certified food protection managers course and have the certificate available in the food truck for review.

    Observation: applicant has six months to have written cleanup procedures available in the food truck that details cleanup procedures for vomit or other bodily fluids.

    Observation: applicant has six months to complete a certified food protection managers course and have the certificate available in the food truck for review.
  • Mobile holding tank 15% larger than supply and sloped to drain
    Observation: the fresh water tank is 15-gallons and the waste water tank is 11-gallons in size. The waste water tank is required to be 15% larger in size than the fresh water tank. The current design of the waste water tank is mounted up-side-down underneath the truck with a garbage bag wrapped around the main opening (to prevent leaking) that would normally be at the top of the tank but is currently on the bottom of the tank as it's mounted. The new waste water tank must be properly positioned to ensure that no leaks will occur.
  • Established procedures for responding to vomiting and diarrheal events
    Observation: applicant has six months to have written cleanup procedures available in the food truck that details cleanup procedures for vomit or other bodily fluids.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation: a thin-probe tip-sensitive digital thermometer is needed for cooking thin foods and for use throughout the food service areas.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: sanitizer test strips are needed for the type of sanitizer used. Currently you have Chlorine sanitizer test strips but you are using Quaternary Ammonia sanitizer that the Chlorine test strips will not measure.
  • Physical facilities maintained in good repair
    Observation: the LP tanks located inside and outside the food truck must be secured in a manner that protects the tanks from movement or becoming dislodged during transport.
  • Mobile water tank and hoses made of safe materials
    Observation: a designated water hose is needed for filling the fresh water tank of the food truck. The water hose must be made of safe food-grade material and kept for use only with the food truck.

Do not do business with this taco truck. The owner is bad news and is not looking out for anyone but himself. The food is not the same since it was taken over and the owner doesn't care about his customers. I would not recommend ANYONE to eat here. I want to support a small business that does good for his community not take everyone down.
