Materials and workmanship The workmanship of utensils does not allow proper cleaning. Specifically, I observed a hand tool fabricated out of aluminum, which is used on line 6 (P16-040) to manipulate baked crackers. The hand tool was in poor condition and the condition of the tool does not lend to the device being easily cleaned. One end of the tool handle had an opening but this end of the tool was bent and slightly crushed, with food residue being observed inside this area of the tool handle. The tool was removed from the area upon notifying management. Management has stated that a new utensil will be fabricated and will be designed so that it is easily cleanable. Corrected on site. Food-contact - unlawful indirect additives Failure to maintain food contact surfaces to protect food from contamination by any source, including unlawful indirect food additives. Specifically, I observed a conveyor belt (P16-020) on line six that was not maintained in good condition. The edges of the belt were frayed and portions of the plastic belt were missing. This belt is a direct food contact surface which is used to transfer baked crackers during the packaging process. The firm was aware of the condition of the belt and management stated that a work order was in place to replace the belt. Reasonable precautions All reasonable precautions are not taken to ensure that production procedures do not contribute contamination from any source. Specifically, I observed plastic five gallon buckets used in the ingredient hand weighing station, 3rd floor of mixing area for lines 2,3,4, which contained soy lethicin and molasses. These buckets were not labeled to identify the inner contents.	12/03/2014	Pre Opening
