Observation: Thin probe, tip sensitive, digital thermometer not present to check temperatures in thin foods.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Walls behind and around equipment are soiled with grease/smoke staining.
- Storage of clean linens, single-service, and single use articles
Observation: Single use items stored on the floor.
- Cleanability of floors, walls, and ceilings
Observation: Large sections of tile missing behind the bar making it difficult to clean.
- Storage and maintenance of wet and dry wiping cloths
Observation: Cloths used to wipe counters/bar not kept in a sanitizer solution in between use.
