- Drying mops
Observation: Mops were not being air dried. Hang them when done using them.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Carts and hot pads were not clean to sight.
- When to wash
Observation: Employees were placing gloves on without washing hands. The staff was instructed that hands shall be washed prior to placing gloves on.
- Separation from food, equipment, utensils, linens, and single service
Observation: Chemicals were being stored above the third hole of the sink. The chemcials were moved to a safe location where they would not contaminated the food.
- Multiuse food contact surfaces are cleanable
Observation: Spartulas were damaged. Containers were damaged where taco shells were being stored. Ice scoop was damaged. Containers were damaged and shall be replaced.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: Vent screens were missing in the ceiling air conditioning unit. Blower units in the cest fridge units were not clean to sight. Walk in cooler units vent screens were not clean to sight.

Observation: The time mark was beinga allowed to stay on the line for 6 hours. 4 hours is the longest a product can stay on the line at any temp.

Observation: The gaskit on the ice machine was damaged aed the floors in the walk in cooler unit was not clean to sight.
- Written procedures prepared in advance and made available to the regulatory authority that specify methods of compliance
Observation: Thre was not any written plan for time as a control.
- Handwashing signage
Observation: Handwashing signs only were not posted by each hand sink. Signs were provided and the management stated they would post them by the sinkgs.

Observation: Scoop handles were laying in the ice. Handles were popped out of the ice. Scoops did not have handles on them in the food. Scoops were replace with handled scoops.

Observation: The ice machine was not clean to sight. The unit was cleaned prior to me leaving. Taco sheets were not clean to sight. Other food contact surfaces were in need of cleaning.

Observation: The intake vents and fan were not clean to sight in the walk in cooler.

Observation: The gaskets to the ice machine were peeling off.

Observation: The facility did not have a procedure for cleaning diarrhea and vomiting events.

Observation: The ice scoop handle by the drive through window was laying on the ice. The ice scoop in the prep area was being stored in standing water.

Observation: The cutting boards were not clean to sight. They were stained black and had some deep groves in them. One spatula in the prep area was damaged and discarded.

Sanitizer bottles in the back room were being used as water bottles for windows. Corrected at time of inspection

A couple of squirt bottles and shaker containers were not labeled.

The vents in the walk in cooler were slightly dusty. The intake vent to the back of the blower was dusty as well.

The scoop in the cinnamon container did not have a handle on it. The can opener was filthy. Corrected at time of inspection --The push carts by the pop area had lots of crumbs on them. The wire racks in the walk in cooler had dust and food on the untis. The bottom of the shelves in the taco salad shells cabitnet had some crumbs on it.
