    Observation: Facility does not have written procedures present at time of inspection.

    Observation:Chicken nuggets and seafood items are not date marked for keeping over 24 hours. Staff date marked during inspection.
  • Miscellaneous sources of contamination
    Observation: Chopped lettuce is stored in grocery bags.
  • Parasite destruction (raw or partially cooked fish)
    Observation: Facility does not have parasite destruction records for wild caught pollock.
  • The ability to explain how the PIC, food employees, and conditional employees comply with the reporting responsibilities and exclusions or restrictions of food employees
    Observation: Facility is not using Form 1B for Employee Health Reporting.
  • Using a handwashing sink- operation and maintenance
    Observation: Hand sink in kitchen had food debris in basin. Staff cleaned during inspection.

    Observation: The facility was not time marking their carrots that were cooked and held in vinegar.
  • The ability to explain the responsibility of the person in charge for preventing the transmission of foodborne disease by a food employee who has a disease or medical condition that may cause foodborne disease.
    Observation: The facility did not have a sick policy in place. I provided the facility with the reporting agreement form 1-B and the facility stated they would have everyone read through it and place it into policy.
  • Established procedures for responding to vomiting and diarrheal events
    Observation: The facility did not have a diarrhea vomit clean up plan in place. I provided them a noro clean up plan from the state and they stated they would copy it and place it into protocol.
  • Storage and maintenance of wet and dry wiping cloths
    Observation Wiping cloths were being set on counter tops after each use.

    Observation: Observed potentially hazardous foods in the walk in cooler temped at 45*.

    Observation: Observed raw hamburger stored above raw whole muscle meat. Observed raw chicken stored above raw whole muscle and raw hamburger. Raw meats were moved during inspection. Corrected.

    Observation: Observed bleach sanitizer below 50ppm. Bleach was added to water. Corrected.

    Observation: Observed handles of scoops stored in food. Scoops were removed. Corrected.

Never liked authentic foods but this place grew on me. They need to get a location in Bismarck, ND.
