    Observation: There was chicken thawing in one bin of the three compartment sink in standing water. Discussed the importance of the constant flow of water during the thawing process. PIC turned on water to correct violation.

    Observation: In the walkin cooler, the ambient temperature was 46-47 degrees and there were hamburger patties at 43 degrees. The ham, roast beef, and diced tomatoes in the refrigerator were at 43-44 degrees. The walk-in cooler and refrigerator was turned down at time of inspection.
