    Observation: Observed wood shelves in the walk in cooler that are soiled and have paint peeling off.

    Observed excessive grease and dust buildup within the exhaust hood system.

    For sanitary reasons, ice for human consumption cannot be stored in the same vessel as the ice used to surround the soda cooling plate. Observed soiled soda fountain harnes and drain tube in the bar. Initiated correction onsite.

    Thin-probe tip-sensitive thermometer is needed for thinly cooked foods. Repeat violation.

    Provide single-service paper towels for the hand wash sink in kitchen. Observed can & bottle storage in front of the handwash sink in kitchen - the wash sink must be convenient for use at all times.

    For sanitary reasons, ice for human consumption cannot be stored in the same vessel as the ice used to surround the soda cooling plate. Observed soiled soda fountain harnes and drain tube in the bar. Initiated correction onsite.

    Observed soiled floor and shelving in the walk-in cooler. Wood shelving in the walk-in cooler will need to be re-painted in the foreseeable future. Clean the inside of microwave and remove unnecessary articles from the kitchen.
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observed packaged Lasagna thawing on the kitchen counter top. Thawing must take place either under refrigeration, under cold running water or as part of the cook process. Lasagna was placed in walk-in cooler for correction.

  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observed ham and sliced tomatoes with no datemarking - corrected onsite.
