Only cooling small amounts of soups but using plastic containers that are covered. Metals work better than plastics and covering products doesn't allow heat to escape or allow cold air to directly cool product.

Clean the top of dish machine on a regular basis, fan in walk-in excessive dust, and wall in dish area needs cleaning. Manager stated that establishment has plans to remove some of the wall and place FRP board behind it. Overall clean in establishment is good.
