Observation: Hot water sanitizer dish machine temperature gauge was incorrect. Service was called.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Staff was not date marking with same process (some dates were discard dates, others were preparation date).
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Salad in crisper temp 48*F, crisper was adjusted and salad cooled to 38*F.
- Bare hand contact with ready to eat foods
Observation: Bar staff cutting lemons without gloves. Lemons were discarded and employee educated on when to wear gloves for ready-to-eat foods.
- Cooling foods are stored properly
Observation: Cooling Rice was covered with large plastic lid. Educated cooling methods and storage, lid was moved to vent and rice stirred periodically.
- Frozen PHF/TCS foods are properly slacked and thawed
Observation: Frozen vacuum packaged fish was thawing still sealed.
- Sanitizers
Observation: Bleach-water sanitizer was 200ppm. Sanitizer was diluted to 100ppm.
- In-use utensils, between-use storage
Observation: Tongs and knife stored directly in sanitizer water bucket.No container with 135* F provided.
