Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours Observed deep pan of spaghetti with sauce in walk-in cooler - spaghetti was deep in the pan and wrapped in plastic, temperatures ranged from 41-43 degrees. Person in charge stated that the spaghetti was placed in freezer to cool, then placed in walk-in cooler. Cooling logs are maintained by staff, but the spaghetti cooling process was not documented on the form. Spaghetti was discarded, corrected.
Mechanical warewashing equipment, sanitization pressure Rinse cycle water pressure was 30 psi, instead of 15-25 psi.
