    Observation: ice machine needs cleaned ASAP and can opener needs cleaned more often--new blade?
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: unit under grills is not cool enough-49 on raw meats- will use alternate cooler
  • Storage and maintenance of wet and dry wiping cloths
    Observation: use wiping bucketinstead of common towel.

    Observation: use paper towels at bar sink.

    Observation: no sanitizer present in dishwasher. Will begin useing manual washing until repaired. DO NOT DRY SANITIZED DISHES>
  • Raw eggs broken on request and prepared for immediate service cooked to 145° for 15 seconds

    Observation:Improperly thawing turkey in cold water in sink.
