    Observation: food-water and breading not labeled. Was labeled at inspection.

    Observation: Some foods either improperly dated or not dated. sssome food is properly dated.
  • Established procedures for responding to vomiting and diarrheal events
    Observation:no vomit and diarrhea clean-up procedure.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Observation: filters are not clean. owner stated cleaning of hoods is scheduled
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: roast beef sitting at 72 degrees. was reheated to 165 degrees
  • Bare hand contact with ready to eat foods
    Observation: gloves were not being used for all ready to eat-pickles, etc. gloves were put on. A thong could be used.

    Observation: person is charge is not knowledgeable.
  • Foods are cooled using appropriate methods
    Observation: large roast was setting in roaster not on, but not cooling. Then taken to kitchen and put in lidded pan. Discussed proper cooling methods.

    Observation: dishwasher needs cleaned.

    Observation: food should not be directly on floor in walk-in

    Observation: refrig by ice cream machine at 52 degrees-milk, oj thrown out.

    Observation: floor in dishwashing room is not clean and floor is in poor condition--not easy to clean.
