PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control Observation:The east prep cooler by the fryer was at 50 degrees. The door seal is falling apart, there was warm air blowing inside the cooler. Test kit provided and used to measure sanitizing solution concentration Observation:There are no chlorine test papers to monitor the chlorine sanitizer, which shall be 50 to 100 ppm. Equipment location, installation, repair, and adjustment Observation:The new handsink is not sealed/caulked to the wall and the new mopsink is not sealed/caulked to the floor. Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness Observation:The amount of sanitizer detected in the rinse cycle is below 50 ppm - there is an excess amount of soap in the rinse cycle, and there is lime buildup inside the machine.
