Observation:There is standing water in the basement, northwest corner.

Observation:The east prep cooler by the fryer was at 50 degrees. The door seal is falling apart, there was warm air blowing inside the cooler.
- Test kit provided and used to measure sanitizing solution concentration
Observation:There are no chlorine test papers to monitor the chlorine sanitizer, which shall be 50 to 100 ppm.
- Equipment location, installation, repair, and adjustment
Observation:The new handsink is not sealed/caulked to the wall and the new mopsink is not sealed/caulked to the floor.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:The amount of sanitizer detected in the rinse cycle is below 50 ppm - there is an excess amount of soap in the rinse cycle, and there is lime buildup inside the machine.
- Handwashing signage
Observation:There are no handwashing signs in restrooms or at kitchen handwashing sinks. Corrected on site.
