A container of mashed potatoes was in the reach in cooler without a preparation date. PIC stated the mashed potatoes were prepared on 11/20/15. A container of biscuit gravy was in the reach in cooler without a preparation date. PIC stated the gravy was prepared on 11/20/15. COS, all items date marked.
KDA_4_30111 - --The make table ambient air was 46F/47F. The small reach in cooler ambient air was 45F.
KDA_4_90311B - --Utensils were not stored inverted while stored in a plastic container as clean.
KDA_6_30112 - --No paper towels were at the handsink located behind the front counter. PIC stated he was out of paper towels.
KDA_6_501111A - --20 fresh mouse droppings were on stainless steel table next to the microwave. PIC witness the pressure that was applied to mouse droppings to determine the freshness of the droppings. The mouse droppings flatten out when pressure was applied to the droppings. 20 Fresh mouse droppings were in a corner space under the front counter. No pest control invoice was provided. PIC state pest control is provided monthly by the owner of the building.
KDA_Defacto - --Provided a Focus on food safety book to the person in charge. --Provided test kit for the use of chlorine. --Sliced tomatoes 43F were in the make table. PIC stated the tomatoes were just placed into the make table. The ambient air of the make table was 45F.
