3-501.17(A) - --In the True Reach In Cooler, there was a container of (prepared on site) tacos with the date 9/16/15. According to the Employees, the tacos were taken placed into the freezer on that date and placed in the cooler on 9/26/15. Corrected on Site - Labeled.
KDA_3_50115B - --In the Walk In Cooler, there was a stainless steel container with hot fried potatoes with the lid tightly covering them so they can not cool. Corrected on Site - Removed lid.
KDA_3_50116A2 - --In the East Make Table, there was a container of Pico de Gallo (prepared on site) at 50.2F. and a container of Guacamole (prepared on site) at 46.3F. According to PIC, the items were made this morning at 10:00 a.m. Note: The temperatures were taken at 11:50 p.m. Corrected on Site - Moved to Walk In Cooler to bring the temperatures down.

3-501.17(A) - Pf - Date Marking (Prepared on-site, removed from freezer and not updated) POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days.
