- 4-302.14 - --There is a quaternary ammonia sanitizer dispenser at the 3 vat sink. Three tubes of chlorine test strips were provided, but quaternary ammonia test strips were unavailable. Let staff know that this type of test strip should be ordered in to verify their new sanitizer concentration.
- KDA_3_50118A3 - --There are two items in the silver cooler in the kitchen that are dated to be held for more than 7 days. They are as follows: Chopped Salad - dated 9/14 thru 9/21 Chili - dated made 8/25, frozen 8/25, thawed 9/14, discard 9/20 COS - explained to staff the errors in date marking. Dates were corrected appropriately.
- KDA_4_20211A2 - --There is a chipped plastic food container lid in a stack in the dry storage room. COS - this was removed. It was placed with another broken/cracked lid that is set aside so that it will not be used. Recommending that these chipped/cracked lids, as well as the blender that staff said was no longer used, be discarded or removed from the establishment so that they will not be used by accident.
- KDA_4_60111A - --There are two containers on a shelf that staff identified as a shelf of clean containers. These containers have stickers on the outside from the previous labels on the containers. Corrected on Site (COS) - the person in charge (PIC) moved these to ware washing. The meat slicer, identified by the PIC as not having been used today, has food residue on the back of the blade. COS - she cleaned the slicer.
- KDA_4_60111C - --The fan in the ware washing area has dust accumulation on the back of the fan cover. The fan below the microwave has slight dust accumulation on it.
- KDA_4_90311C - --There is a single stack of styrofoam trays below the steam tables at the serving line that are stored outside of their original protective packaging, neither covered nor inverted.
- KDA_4_90411B - --There are pans of plastic utensils above the teacher's salad bar. The utensils in these tubs have the handles facing two directions, so that grabbing the handle of one utensil may result in touching the food contact/lip contact surface of another.
- KDA_5_20314 - or, Installing an APPROVED backflow prevention device as specified under § 5-202.14.
- KDA_6_20211A - --The light in the walk-in-freezer is unshielded and unprotected.
- KDA_6_20214 - --The restroom door is not self-closing.
- KDA_6_50119 - --The restroom door is open during the inspection. Cleaning and maintenance are not being performed.
- KDA_7_10211 - --In a cabinet under a sink in the kitchen there is an unlabeled spray bottle with a clear liquid inside. This was identified as sanitizer by an employee. COS - this was labeled. In the dining area there was an unlabeled spray bottle with a blue liquid inside. This was identified as windex by the PIC. COS - she labeled the bottle.
- KDA_Defacto - --Hot water dishwasher - 158.7 F (NOTE - recommending director have dishwasher temperature turned up to bring this dishwasher up to 160 F or above on the final sanitizing cycle) --Licensing inspection on a change of ownership - cafeteria is open and operating. --Reheating on the stove --Thawing in cooler --The sinks in the kitchen are directly plumbed. Spoke with staff about options of indirectly plumbing them, or using alternative options for washing produce/food products. They are currently placing large bowls in the sinks that stick up out of the sinks, then placing their colanders inside this bowl. --Walk-in-Cooler: Cottage Cheese - 36.1 F Cooler: Cheese - 40.2 F Milk Cooler: Milk - 39.2 F Milk Cooler 2: Milk - 40.1 F
