KDA_2_30114G - --Cook shells raw eggs to grill with bare hands and does not wash hands prior to donning gloves to later work with ready to eat food. Education provided on when to wash hands. KDA_3_10111 - --Cooked used same glove, on right hand, from shelling raw eggs to the grill to touch and butter toast and place on serving plate. Discarded the toast. KDA_3_30211A1b - --Wrapped package of ready-to-eat sliced ham touching wrapped lug of raw sausage. Located in the bottom drawer of the kitchen refrigerator. Separated and education given. KDA_3_50116A2 - --A four-sliding-door reach in cooler in the storeroom that went done yesterday afternoon was cleared out of time/temperature sensitive foods except for a case of single-portion serving Philadelphia cream cheese spreads, requiring to be keep refrigerated. These are now discarded having reached up to 66 during the night. Professional refrigeration firm was called this morning to fix the unit. The cold hold self service buffet salad bar was set up at 10:30am and is maintained all day till about 7:30pm. At 11:40am the following were found KDA_3_50118A1 - --One container of previously cooked spaghetti noodles were in the RIC, dated 10-7-15 and held greater than 7 days. Discarded KDA_3_50118A2 - --pack of sliced ham in the kitchen RIC that did not have a date mark. According to cook, it was just taken out of freezer yesterday. Marked the date on package. KDA_3_60311B - --Consumer advisory is on current menu, but there is no asterisking to the menu items that could be served undercooked at the consumer's request. KDA_4_204112B - --No ambient air temperature device in the kitchen[Frigidaire] refrigerator. Probe of roast beef in the unit was 39. No ambient air temperature device in the back storeroom [Whirlpool] refrigerator. Internal probe of a shell egg 42. KDA_4_60111A - --Mounted potato slicer with dried on foods residue. Cook did not known last time it was cleaned. Cleaned on site during inspection. KDA_4_60211E4 - --Inside ice maker with the bottom edge of deflector shield with slight growth of mold. Corrected on site by wiping clean. KDA_6_20211A - --Three screw-shaped florescent bulbs in the kitchen and two of the same and one incandescent bulbs in the waitress station have not shielding or bulb protection. KDA_6_50112A - --under the west prep table in the kitchen is a small amount of dried foods to be cleaned out. KDA_7_10211 - --one spray bottle, identified by cook as being degreaser, with no label of the contents on the container. This was located under the three-compartment sink in the kitchen. Bottle labeled immediately.
