COS- discarded In kitchen above food prep area there was a knife that was chipped on the blade. COS- removed and marked for personal use. KDA_3_50116A2 - --Coke reach in south wall, egg wash 48F, breaded chicken 50F, white meat breaded chicken 48.6F, breaded chicken 44.5F, wonton 43.5F. Ambient of reach in was 44.4F. Employee said they had reach in repaired last week. Employee said all items were prepared at 11:00-11:15 AM today. COS-all items were placed in walk in cooler. Person in charge said, they will rearrange the coke reach in so it's not facing the hot grill. They will also only store what they need for a couple of hours in it. KDA_4_30111 - --Coke reach in on the south wall, was not keeping food cool to 41F. Ambient was 44.4F. While inspector typed up report, the temperature in the coke reach in came down to 43.2F. KDA_4_90311B - --Above the three compartment sink, there were two containers stored cleaned that were stacked wet. Educated employees on how to stack them to dry. COS-placed to be rewashed. KDA_5_501113 - --The lid on the trash dumpster was open and the gate around the dumpster was open. 3-303.11 - Ice (Exterior coolant) After use as a medium for Cooling the Exterior SURFACES of FOOD such as melons or FISH, PACKAGED FOODS such as canned BEVERAGES, or Cooling coils and tubes of equipment, ice may not be used as FOOD.
3-302.11(A)(2) - Cross contamination by Raw Animal FOOD type - FOOD shall be protected from cross contamination by separating types of Raw animal FOODS from each other such as beef, FISH, lamb, pork, and POULTRY during storage, preparation, holding, and display by: using separate equipment for each type- arranging each type of FOOD IN equipment so that cross contamination of one type with another is prevented- or, preparing each type of FOOD at different times or IN separate areas
