  • KDA_3_50119B2 - --The employee was marking the salad bar items with a computerized time stamp for using time as a control. The time of the unit was not changed at the time of daylight savings time and indicates the time being 1 hour different from what is actual time. Corrected on site Manager updated the time on the machine.
  • KDA_4_60111A - --2 metal spreaders of 4 has dried on food debris and are stored as clean. 2 of 15 rubber scrapers have dried on food debris and are stored as clean. 2 steam table pans of 18 have dried food debris and are stored as clean. A large number of food containers has residue of date labels and are stored as clean. Corrected on site first 4 items were placed to be cleaned. Food containers were removed from service until labels are removed.

There is no vacuum breaker on the faucet but the manager demonstrated where the dual check valve is located. --Deep fryer to hot hold - breaded popcorn shrimp 203.2 --Hot hold cabinet - polish sausage 135.6 Customer self serve steam table - #1 chicken noodles 137.2, #2 prepared on site spanish rice 136.8, #3 steamed broccoli 137.3, #4 steamed white rice 136.0, #5 commercial roast with vegetables 142.6, #6 meatloaf 136.58, #7 prepared on site rice pilaf 136.6, #8 prepared on site sausage egg burrito 147.8 --Reach in freezer - food frozen solid --Sanitizing container with wiping cloth stored - quaternary 200 ppm --The dining area has 4 locations where the customer may get plates and silverware. All 4 locations were inspected by randomly pulling plates and silverware from several different places.
