  • KDA_Defacto - --All items used in the remodeling of the business are located on the north of the customer self serve buffet along the east wall. --Food is properly stored in the dry storage, walk in cooler and walk in freezer of the kitchen area. Food is properly held in the customer self serve buffet. No foreign objects are seen in the food offered in the customer self serve buffet. No boxes of food is stored in the area of the business where the remodeling is taking place. --Sealed boxes, except one being used out of, of fortune cookies are stored on top of a table, east of the restrooms. No food items are stored in the area on the north side of the customer self serve buffet where remodeling of the dining area is being done. --The kitchen, waitstaff area, and customer self serve buffet was inspected and all areas are clean. --The person in charge of the dining area said the construction workers come in at 10 pm and work until 7 am. She said the employees come in at 9:30 and clean all of the dining area before food is brought out. She said there is no construction during the hours the business is opened to serve customers. The kitchen employee said they come to work at 9 am and the kitchen is cleaned before the any food is prepared. The physical inspection of the business included wiping the tops of the customer self serve buffet area, the dividing walls of the dining room, the tops of single use packages of napkins stored in the waitstaff area, the tops of equipment and work tables in the kitchen. Very little dust was found and no foreign debris was seen. The dry storage area was inspected and found to be clean. No food splatters or other substance was seen on the ceiling tiles, there were 4 dining room ceiling tiles that had water stains. On the north side of the dining room a blue tarp is hung from the ceiling to the floor. A table saw is on the north side of the tarp and there is an accumulation of saw dust on construction equipment and the floor. There is a small accumulation of saw dust just on the south side of the tarp where construction items are sitting on tables. In this area cardboard has been placed on the carpet and there is a small accumulation of saw dust. --Utensil, equipment and single use items were inspected in the customer self serve buffet area, waitstaff area and kitchen. All items were found to be clean and free of any contamination.
