KDA_3_50119A1a - --There is a temperature and time stamp provided by the kitchen staff for the eggs sitting out on the counter. The temp/time stamp shows that the eggs were 165 F at 6:20. The kitchen manager is unable to provide the written procedures for the time as a control upon request. Note - other schools in this district have all provided written procedures stating that the district is using time as a control with their processes. COS - Having the food service director for the district make sure this school has the appropriate written procedures.
KDA_3_50119B2 - --There is a package of cheese slices (approximately 80 slices) and a box of string cheeses (approximately 40 string cheeses) that are sitting out at room temperature. The kitchen manager said these are under time as a control when questioned. She does not have time or temperature stamps for these two items. She was able to identify they had been pulled out by 7am at the earliest. Corrected on Site (COS) - the cheeses were discarded once breakfast was complete (approximately 810am).
KDA_4_90311C - --There is a single stack of single-use paper/styrofoam plates on top of the cooler in the kitchen. These plates are outside of their original protective packaging, neither covered nor inverted.

It is directly above 2 pans on the bottom of the cart. The kitchen manager said these are pans that are to be returned to the high school and cleaned there. --Wiping cloth stored in 200-400ppm quaternary ammonia. Label calls for 150-400ppm
