3-304.15(A) - --An employee wearing gloves handled raw hamburger, then touched a clean dish for ready-to-eat food using the same pair of gloves. COS: educated, moved dish to warewashing, employee washed hands and changed gloves.
KDA_2_30112B3 - --Employee touched raw hamburger then washed hands using soap for approximately 3 seconds before rinsing. Corrected on site (COS): manager educated and directed employee to rewash hands.
KDA_3_30511A1 - --A case of mayonnaise dressing was stored on the floor in the WIC. COS: manager moved case to a shelf. A case of vegetable mix was stored on the floor in the freezer.
KDA_3_50116A2 - --In Garland RIC, two opened containers of pasteurized liquid eggs had temperatures of 46F and 55F. The person in charge (PIC) said the eggs had been in use near the grill just prior. COS: suggested using an ice bath while in use to maintain temperature control. PIC chose to discard.
KDA_3_50119B4 - --On the make line, lettuce was at 50F in an unmarked container. Manager said lettuce had been out for 15 minutes and time was being used as a public health control.
