COS-Discussed silo system and employee/owner relocated chicken.

COS-owner placed chicken into a food grade container and returned to walk in freezer. Future use of raw chicken containers will require discard of the cooked product. KDA district manager ok'd disposition without disposal, due to cooking process to over 165.0 when cooked for service. Raw chicken box was discarded.

In kitchen walk in cooler, facility cooling Lo-Mein 68.3 2 hours after cooking. --make table, raw beef 37.6, raw chicken 36.0, 38.4, eggs 38.1, cabbage cut 38.2, Lo Mein 37.4, pork 36.8, shell eggs 40.4, Won ton 38.4, sweet and sour chicken 39.6, sweet and spur pork 39.2, Walk in cooler, raw beef 38.4, sweet and sour chicken 31.7, Frozen foods ok, --rice scoops stored in hot water 147.6 --When asked owners son said food items were made with in last 24 hours. --white rice, 171.4, fried rice 146.7
