The employee working in the kitchen area did have her hair properly restrained in a ponytail. Owner said he will be sure to check that his employees have their hair restrained when working with food.

They pulled all the potentially hazardous foods to the walk in cooler and allowing the cooler to cool back to 41F or below. --There were a few flies noted in the establishment, but it is better than the previous inspection and the manager has put in some control measures.

  • 3-302.11(A)(2) - --In the meat walk in cooler, raw chicken was stored on top of raw beef and raw pork. COS: Educated about proper storage and the manager moved the raw chicken.
  • KDA_2_30112B5 - --In the meat department, the manager washed his hands correctly, but then grabbed a cotton towel to dry them off. Corrected on site (COS): Educated about using disposable towels which were available at the hand sink.
  • KDA_3_10111 - --In the deli/meat case, 4 small packages of deli meat had no date marking and the manager did not know the exact date they were opened. COS: Manager voluntarily discarded items in the trash. NOTE: The larger open packages of deli meat were all date marked, but the manager said that the smaller pieces were not from those packages, they were from the previous package.
  • KDA_3_20111C - --In the ice cream freezer by the deli, there were 3 ice cream bars labeled not for individual sale, not properly labeled. COS: Manager pulled from retail sale.
  • KDA_3_20111F - --In the freezer bunker, raw sausage packaged in the facility did not have the safe handling instructions on the package.
  • KDA_3_20215 - --In the frozen food reach in door, the lid of a container of Tyson chicken livers was open and the food was visible.
  • KDA_3_30111B - --The manager was making a deli sandwich at the make table while using his bare hands. He placed the bun and sliced tomatoes on the sandwich with bare hands. COS: Educated about bare hand contact and he voluntarily discarded the items in the trash can. He washed his hands and then donned gloves to remake the sandwich.
  • KDA_3_30211A1b - --In the meat walk in cooler, raw shell eggs were stored above ready to eat single serving containers of butter. COS: Manager moved the eggs to the dairy cooler. In the deli/meat display case, cooked pork chops were next to raw pork chops and raw pork ribs.
  • KDA_3_30212 - --A clear spray bottle with clear liquid was setting above the make table. Manager said it was water for the pizzas. COS: Manager labeled. Below the prep table by the fryer, the bulk container that holds the flour/fryer batter is not labeled with the common name.
  • KDA_3_30412B - --In the make table, a red cup with no handle was setting in the container of mozzarella cheese.
  • KDA_3_30414B1 - --The bucket with clear liquid and wiping clothes on the 3 compartment sink had no detectable sanitizer. Inspector educated the manager about having 50-200 parts per million chlorine in the bucket.
  • KDA_3_30511A1 - --In the meat department/deli area there were cases of sauces on the floor. In the dairy walk in cooler, a cardboard case of milk and a case of sour cream were setting directly on the floor.
  • KDA_3_50116A2 - --In the top of the make table, sliced ham (47.3F) and an open package of shredded cheese (45.1F) were not maintained at 41F or below. Items had been in the cooler for more than 4 hours. COS: Items were voluntarily discarded in the trash. All other items in the make table were maintained at 41F or below. In the produce open air cooler, 18 bags of coleslaw (51.5F), 69 bags of lettuce (50.1F/51.3F/52.6F/50.8F), 6 packages of tofu (55.4F), and 4 containers of cut waternelon (50.3F) were not maintained at 41F or below. COS: All items were pulled from the retail cooler and voluntarily discarded in the trash.
  • KDA_3_50118A1 - --In the produce open air cooler, 4 containers of cut watermelon were dated 8/11, held over 7 days. COS: The manager pulled the items from the cooler and voluntarily discarded them in the trash can.
  • KDA_3_50118A2 - --In the bottom of the make table, 6 containers of deli meats (turkey, ham, salami) had no date marking. COS: The manager said they were all prepped yesterday morning around 8:30am, over 24 hours at time of inspection. In the meat walk in cooler, 2 containers of cooked chicken/potato wedges and cooked ribs had no date marking. COS: The manager said the chicken was cooked on Saturday and Sunday and the ribs on Sunday. Inspector told the manager that those items need to be date marked for 7 days. In the deli/meat case, ham salad that is made in the facility had no date marking. COS: The manager said it was made 4 days ago and labeled the container.
  • KDA_3_60211C - --The Brach's bulk candy at the front of the store does not have a list of ingredients on the display. Inspectors suggest having a sign stating the ingredients are available upon request and cut the labels off of the product boxes to keep for customer information upon request.
  • KDA_4_10111A - --The breading for the chicken is stored in direct contact with a non-food grade sterilite container. In the make table, lettuce was stored in direct contact with a non-food grade sterilite container.
  • KDA_4_20211A2 - --In the make table, there was a glad container with a broken and and cracked edges.
  • KDA_4_20216 - --On the meat grinder the push bar (used to push the meat into the grinder) has duct tape on the handle.
  • KDA_4_30111 - --The produce open air cooler is not maintaining potentially hazardous foods (PHF) at 41F or below. DO NOT USE this cooler for PHFs until it can maintain 41F or below. Inspectors suggested using the dairy reach in cooler door for storing/selling bagged cut leafy greens and other produce that is a PHF.
  • KDA_4_50111A - --The outside walk in freezer has ice build up on the floor. In the dairy walk in cooler, there is water on the floor from the compressor leaking. The west end of the reach in freezer doors there is water leaking from underneath the freezers. In the produce walk in cooler, the compressor is leaking and there is water on the floor and dripping from the ceiling. The ceiling of the meat department walk in cooler is rusted and paint is peeling. The sliding door in the middle on the deli/meat case is broken and fixed with tape.
  • KDA_4_50111B - --The door seal on the outside walk in freezer is torn. Foods are maintained frozen. The door seal on the meat department walk in cooler is torn. Foods are maintained at 41F or below. The 3-door True Freezer has a torn door seal on the far right door. Foods are maintained frozen.
  • KDA_4_50112 - --The cutting boards throughout the deli/meat area are stained and have deep cuts and scours.
  • KDA_4_60111A - --In the meat department, the blades on the tenderizing machine had dried on food debris. Manager said it was last used yesterday and it was cleaned. COS: Manager pulled the blades and placed them in the 3 compartment sink to wash, rinse, and sanitize. The knife holder mounted to the side of the wooden cutting board which is used to hold clean knives had dried on food debris on the inside where the knife blades come in contact.
  • KDA_4_60111B - --The fryer in the deli area has grease build up underneath where the grease drains out.
  • KDA_4_60111C - --In the meat department, produce, and dairy walk in coolers the fan guards/ceiling had a build up of dust.
  • KDA_4_60211E4 - --The soda fountain nozzles by the deli had a build up of mold.
  • KDA_4_90311B - --On the 3 compartment sink on the clean side, utensils were stored in a container with the lip contact surface up (not inverted).
  • KDA_4_90311C - --In the meat department/deli, foam single-use trays were outside of their package and not inverted. In the back room storage area, 3 cases of single-use foam trays/cups were stored directly on the floor.

  • KDA_5_20515B - --The right faucet on the 3 compartment sink leaks when turned on.

  • KDA_6_20215A3 - --The walk-thru back door and the roll up door have gaps at the side and bottom that could allow for pest entry.
  • KDA_6_501111B3 - --There were several flies noted throughout the facility. Inspectors suggest more control measures to prevent them getting in the establishment.
  • KDA_6_501111B4 - --There are flat/broken down cardboard boxes on the floor in front of the fryer that could allow for pest harborage.
  • KDA_6_501112 - --In the dairy/lunch meat open air cooler there were several dead flies throughout the case.
  • KDA_6_50112A - --Throughout the facility there is clutter of old equipment, boxes, etc.
  • KDA_7_10211 - --The bucket on the 3 compartment sink containing sanitizer solution (per manager) had no common name on the container.
  • KDA_7_20111B - --On the retail shelving at the west end of the produce open air cooler, there were containers of scrubbing bubbles above cans of van camps pork and beans. In the meat/deli area, there was a can of RAID House and Garden Fly Spray. Manager said it was only used outside and removed it from the area. In the deli/meat area, restaurant safe pesticide and bottle of alcohol were stored above cotton rope used to wrap roasts. COS: Manager moved the chemical.
