Reviewed the approved methods for reheating commercial prepared food to hot hold at 135 degrees. Food prepared by the business that has used fresh potentially hazardous food and is going to be reheated requires a reheat to 165 degrees in a 2 hour period for hot holding. --The person in charge of the snack bar area said the Friday after Thanksgiving she was ill. She said an electric roaster of chili had been made in a private home and brought in for sale. There is a new commander at this post and the food code has been reviewed as to what is and not an approved food source. The person in charge today does know the guidelines and said she feels after a couple of meetings things are going well. Food will only be purchased from approved food sources.
