Corrected on Site - the person in charge provided new test strips KDA_3_30414B1 - --The quaternary sanitizer tested at < 50 parts per million (east bucket). Corrected on Site - Changed out KDA_3_50119B2 - --The container of lettuce salad at the serve line was not marked with a discard time. The container of sliced tomatoes at the condiment bar was not marked with a discard time. Note: The person in charge said that both items are to be discarded at 4 hours (12:30pm). Corrected on Site - established that the items would be discarded within 4 hours. KDA_4_20211A2 - --The lid for the little kettle/pot has a small crack on the interior surface (where the handle is welded). KDA_4_60211A4 - --There was a probe thermometer, stored as clean at the tilt skillet, that had dried food residue build up on the food contact surface. Corrected on Site - Cleaned KDA_5_20314 - or, Installing an APPROVED backflow prevention device as specified under § 5-202.14. KDA_Defacto - --At the service sink, there is a Y attachment with shut-off valves installed downstream of an atmospheric vacuum breaker. Note: One hose is connected to a chemical dispenser provided with an air gap.
