KDA_4_60111A - --In a plastic tote there were 20 round plastic lids with stickers, tape and sticky residue left on them and stored clean (can hold bacteria). COS-discarded 19 lids and placed one lid in the ware wash area. On the utensil rack there was one large metal colander with dried food debris left on the outside near the rim and stored clean. There was also one large clear plastic food grade lid with tape left on it and stored clean. COS-placed both items in the ware wash area.
KDA_4_70211 - --The mechanical dish machine was in use, utilizes chlorine and it measured at 25ppm. The directions on the chemical container states not to go below 50ppm. COS-the hot water rinse reached 160.0F (sanitizing temperature). KDA 61 ran the machine 3 times and all temperatures were reading 160.0F+. (Note: the person in charge will have the machine looked at).
