Store damaged canned goods in a separate designated area. PIC relocated the Diced Peaches to the dented can storage area.

-Observed employees wearing single-use gloves.
-Observed proper thawing under refrigeration.
-Observed proper chemical storage and labeling.

Do not use dented canned goods in order to prevent possible contamination. Store damaged canned goods in a separate designated area for return/credit. PIC relocated the cans to damaged goods storage today.
DATEMARKING: Observed a bowl of hard boiled eggs dated 9/7. Ready-to-eat, potentially hazardous foods (PHFs) shall be dated the day of opening or preparation and used or discarded within 7 days. PIC discarded the eggs today.
-Observed proper thawing under refrigeration.
-Observed employees using single use gloves in order to prevent bare hand contact with ready to eat foods.
-2 accurate long stem thermometers were available for use.
-PIC was knowledgeable about cooling foods properly in shallow pans and reheating properly in the oven.
