  • *4.5/4.6 Observed the employee wash, and sanitize equipment. Equipment shall be washed with soapy water, rinsed or submerged in water, sanitized with sanitizer at appropriate concentration, and air dried.
  • R/6.4 Continue to repair the damaged walls and ceiling throughout the kitchen, to provide a cleanable surface.
  • R/4.5/6.4 Clean the bottom of the McCray unit, white storage shelves in the kitchen, wall mounted fan unit, and hood unit which are soiled/stained.
  • R/5.1 Repair the leaky faucet on the hand sink, plumbing shall be maintained in a state of good repair.
  • R/4.4 Repair the rusty ice shield, and the shelves in the (Hussman) large unit in the rear storage area, to provide cleanable surface.
  • 6.4 Continue to clean the floor surface under the cook's equipment to provide a cleanable surface.
  • 4.4 The three door Hussman unit contained an air temperature of 53°F. Equipment shall be maintained in a state of good repair. The unit was scheduled to be replaced with a Master-Bilt unit on 2/23/11.
  • Note: Sharp Microwaves and crock pots are non-commercial. Be advised these pieces of equipment must be replaced with commercial grade when these are non-functioning.

  • *3.4/4.4 Observed the upright three door unit contained an internal air temperature 41-43°F, and the foods in this unit were holding at 41-46°F. Maintain refrigeration units and food at 41°F and below to limit the growth organisms.
