9/20/2011 | Standard2 | PIC was Kelly PROTECTION FROM CONTAMINATION: Observed one can garbanzo beans, four cans kidneys beans, one chocolate syrup, one can ketchup, and one can of cranberry sauce were dented. Packages of food shall be in good condition to protect the integrity of the contents and to prevent potential contaminants. These canned good was relocated to a separate designated area. Accurate temperature measuring devices were available for use. HOLDING: Refer to holding log below. Foods marked with an asterisks were holding at improper temperatures. Foods shall be maintained at 41°F and below or 135°F and above to limit the growth of organisms. Discussed with PIC, recommended to keep foods hot in the steam table prior to serving, to limit the growth of organisms. |

Be advised foods shall be reheated rapidly to 165°F within two hours. Also discussed keeping foods hot in provided steam table to eliminate the need to reheat them. PROTECTION FROM CONTAMINATION: Observed one dented can of diced tomatoes and three dented cans of cranberry sauce in the food storage area. Packages of food shall be in god condition to protect the integrity of the contents and to prevent potential contaminants. These items were relocated to separate designated area today. Scrambled eggs were rapidly reheated to 165°F and above in the microwave. TEMPERATURE MEASURING DEVICE: One of two temperature measuring devices was reading 40°F when placed in an ice bath. Temperature measuring devices shall be accurate within +/- 2°F to monitor the temperatures of potentially hazardous foods. This device was calibrated. |
